Why Ceylon Cinnamon

Grown in southern and western coasts of Sri Lanka, soft and golden colored rolls of Ceylon cinnamon has long been the queen of spices for its numerous health benefits. Known as the true cinnamon, Ceylon cinnamon is considered superior to the other types of cinnamon found in the global market, as it contains the right aroma, flavor and softness.

Ceylon cinnamon is very mild and sweeter than the cassia cinnamon. It has floral, citrus and clove notes undertones. Those who are used to the harsh and overly spicy taste of cassia cinnamon will find Ceylon cinnamon to be very flavorsome. Compared to cassia, Ceylon cinnamon contains very least amount of coumarin. And it is within safe limits recommended by FAO/WHO guidelines.

Process of production

Ceylon cinnamon is harvested twice a year immediately after the monsoon seasons of the southern and western coasts of the island nation. Then the brown colored outer bark of the harvested tree is peeled off to reveal a softer, light yellow colored inner bark without damaging or fragmenting the bark.

These slim and delicate layers of bark are packed in layers with highly skilled labors to produce the rolled and layered quills of Ceylon cinnamon. The quills then be air dried on racks for 4 to 7 days under strict food safe environment to produce the world-renowned Ceylon cinnamon.

Description of each Grade

  1. Alba (approx. diameter 6mm – 7mm)
    • Alba is the highest grade of Ceylon cinnamon, which gives good taste and fresh exotic aroma among other Ceylon cinnamon grades. Alba is prepared using finest and thinnest inner bark of the tree. Golden brown in color these are the rarest grade of Ceylon cinnamon.

  2. Continental (C – grade)
      1. C5 Special (approx. diameter 8mm – 9mm)
        • C5 Special is the second-best grade of Ceylon cinnamon. Similar to Alba it has an excellent taste, flavor and smell.
      2. C5 (approx. diameter 10mm – 12mm)
        • C5 is the third highest grade of Ceylon cinnamon. Smooth and slender in appearance, deep yellow in color and is sweet in taste.
      3. C4 (approx. diameter 13mm – 14mm)
        • A grade falls under the group of C cinnamon, compared to C5 special and C5, C4 is quite low in quality (4th best). Nevertheless, it is in high demand for its sweet taste, smoothness and pale-yellow color.

  3. Mexican (M – grade)
      1. M5 (approx. diameter 15mm – 18mm)
        • M5 is the best quality of Ceylon cinnamon in the Mexican group (5th best overall). M5 is golden brown in color, thinner in appearance, relatively rough and coarse in texture.
      2. M4 (approx. diameter 19mm – 20mm)
        • M4 is very much similar to M5 grade, mainly defers from the later in terms of diameter, which is usually little higher than of M5.

  4. Hamburg (H – grade)
      1. H1 (approx. dimeter 21mm – 23mm)
        • H1 is considered the best and finest among the H grade. It is most popular among buyers as it is cost effective and for its strong taste.
      2. H2 Super (approx. diameter 24mm – 25mm)
        • H2 super is the 2nd best of H grade. Is thicker than the H1 and is golden yellow in color.
      3. H2 Normal (approx. diameter 26mm – 27mm)
        • H2 Normal is the 3rd best of H grade. It is almost same in color to H2 super and it is thicker than H2 super.
      4. H2 FAQ (approx. diameter 28mm – 31mm)
        • H2 FAQ is the 4th best of the H grade. It consists of brittle quills and is thickest of the H2 grade.
      5. H2 (approx. diameter 32mm – 38mm)
        • H3 is the thickest Ceylon cinnamon grade, it comprises of rough cinnamon bark made of brittle quills

  5. Ceylon Cinnamon Powder
    • Not mixed with other cinnamons
